What to do with pumpkin?

Pumpkin is not a British staple. But supermarkets have started stocking it in recent years during autumn. Today I bought my first ever pumpkins. So, what is it best for? Can I put it in a stew or casserole?

Pies, bars, cookies mostly sweet type food. I have eaten it plain as a vegetable. I have never put it in a stew or casserole but I treat it as sweet potato or yam. I like the taste.

I roast it. Cut into chunks or wedges, drizzle with olive oil, season with a little sea salt and black pepper. You can add herbs like rosemary or thyme too.
Roast for about 30 minutes.
